Sonoma Chicken Salad is a wonderful mixture of tender juicy chicken, crunchy pecans and juicy grapes. Wonderful alternative to all those tuna salads that I have been posting. This Chicken Salad makes a wonderful sandwich as well as a salad served over a bed of greens. I have found this salad few years ago at Whole Foods and have since tried to recreate it here in Virginia. Now we actually got our first Whole Foods which is on the other side of town from me so it is still a lot easier to make this at home. The only problem that I forsee with this salad is that the grape skins can be a little tough on little stomachs so if you decide to serve it to the toddler you should eliminate the grape skin (a tedious process). Alternatively you can use dried fruit like raisins and cherries or real pitted cherry could be wonderful too.
You will need: 2lb boneless cooked chicken breast (I cooked mine in the oven at 375 deg with a 1/3 cup water to make it juicy), 3/4 cup pecan pieces, 2 cups red grapes, 3 stalks of celery (which I eliminated in this recipe) For the dressing: 1 cup of mayonnaise, 4 tsp apple cider vinegar, 5 tsp honey, 2tsp poppy seeds.
In a bowl combine the mayonnaise with vinegar add
Honey and
poppy seeds. Mix well.
My grapes were ginormous therefore I cut them into two.
Throw in the cut up chicken, pecan pieces and grapes into the bowl.
Put the bowl on the floor and have a little one help you with mixing. He loves to help.
Now here it is… your own Whole Foods Sonoma Chicken in less time then it takes you to drive there. Especially when the closest Whole Foods is in another state.

My husband and I had this similar sandwich, when we spent a weekend in Napa– only 2 1/2 hours away from our hometown. We loved it! I tried to recreate it, and I think our recipes are very close. I haven’t posted mine, yet, but plan to do that once I catch up on other recipes I haven’t posted yet! Great tutorial, too.
