Shrimp Noodle Soup

I made this soup just to the other day for the first time ever.  I had an idea of what I wanted in it but not exactly.  My twins really like noodles and anything noodly works with them.  They have also never, ever had shrimp.  Well not at least that I can remember.  They may have tried it on occasion, just to check if they are not allergic to shellfish but they never ate more then a piece.   So I decided to make a Noodle Soup with Shrimp, loaded with Veggies just the way we like it.

You will need: 1lb cooked, deveined shrimp, 1 can of Baby Corn (15 oz), 1 Can Bamboo Shoots (5oz), 4 cups Seafood/Fish Stock, 1 package Rice Noodles ((6.75 oz), 2 cups Mushrooms (we used Shiitake), 4 garlic cloves, ginger root (about 2 inches), 1 lime, 4 green onions, 1 1/2 cups sugar snap peas, 2 tbs soy sauce, 2 dashes of toasted sesame oil, 2 tbs vegetable or canola oil.

Prepare the Noodles according to the package.  You can also use rice, pasta, barley or other grains.

Peel the ginger

and grade it.  If you choose you can mince it but I think grading is so much easier.

Peel 4 cloves of garlic or buy the already peeled ones in the store

Mince or cut up into smaller pieces.  They don’t have to be too small.

Take the green onion slice into even pieces

Over medium heat warm up 2 tbs of vegetable or canola oil

When warm in throw in ginger, garlic and onion.  Saute for 3 minutes

In the meantime cut off the ends of the sugar snap peas

For kiddos I cut my into thirds.  Firstly they are easier to eat, Secondly they are harder to pick out

Chop the mushrooms

Add 2 dashes of toasted sesame oil into the soft garlic/ginger/onion mixture (about 1/2 tsp)

Add mushrooms and sugar snaps, saute 2 minutes

When that is cooking prepare the rest.  Drain the Baby Corn and slice into thirds

Drain the sliced bamboo shoots and roughly chop

When soften add the stock

and 2tbs of soy sauce

Wait till the stock is boiling

Add frozen shrimp, bamboo and baby corn

Bring to simmer and cook about 1 minute or until the shrimp is cooked through.  Add juice of 1/2 lime

Plate the noodles

Cover with Shrimp and Vegetables

Ladle the broth

Serve and Enjoy.  I know my family does.
