I love to make freeze pops in the summer. They are great alternative to ice cream and can include any fruit you can imagine. Actually come to think of it I bet you can squeeze some vegetables into them also. The Pina Colada Pops are one of my favorites. Who doesn’t like pineapple and coconut. The only special equipment you need is freeze pop molds and I suggest you splurge on them. Really? Yesh. I have on numerous occasions bought a dollar version from the biggest chain store in the nation just to have the handles break when I tried to take them out. Not fun with screaming babies in tow. Three tries and three dollars later I splurged and spent 10$ on a nice freeze pops. They are sturdy a lot more fun. This year I am planning to splurge on another shape, just because one is not enough. This one:

Now back to the Ice Pops.
You will need: 1 can of Coconut Milk, 1 small can of Pineapple (8oz), lime, 1/4 cup sugar.
Note: Pineapple does not need to be crushed it will go into a blender in any form. Also the reason you see something up there on the picture resembling brown sugar and not regular one is because I am using Demerara Cane Sugar instead of white one. Why? Just because it was closest to my hand when I was looking for sugar.
So this is really easy throw everything in the blender squeeze in lemon juice, pour into the molds, freeze eat. But I know you do not like it that way….. so here we go:
Into the blender pour in the Coconut milk
Add the pineapple with all its juices
Squeeze in the juice of lime. Make sure to use a whole one.
Add sugar and blend until the pineapple is mushed and mixed
You will still have a few smaller chunks of pineapple in the mix which is nice and chewy when you bite into them
pour into the molds
cover and freeze. See the good molds will have holes or grooves to help the ice attach. The plane sticks just do not cut it anymore. I’m sorry
These troops are now ready for a lift off. In about 2 hours they will be landing in little bellies on more likely on their shirts.
If you have any of the potion left over just keep it in the fridge up until the troops are ready for fill up.

My mom used to make homemade orange popsicles all the time when I was a kid…but no such luck since then. I love the pina colada combination! Maybe I can get her to dig up her old molds…
