There is nothing better then home made ice tea or lemonade. On a hot spring/summer day to be able to sit back relax and drink all the fresh good ingredients that make up these brews. This plain ice tea is made so much better with ginger and peaches which you can enjoy just like this or with an addition of rum or peach snapps.
You will need: 1/3 cup loose Earl Grey or Darjeeling tea (about 7 bags), 1 lemon, 1 piece of ginger (about 2 in), 1 qt boiling water, 3 small (2 large) peaches, 1/2 cup sugar.
Peel ginger and smash with the side of a knife
Slice the lemon
Place lemon, ginger and tea in a heatproof container and add boiling water. Steep for 8 minutes.
In the meantime, peel, core and slice the peaches.
Blend with 1/2 cup of sugar.
Pour the tea into a pitcher discarding all the extras
add in the blended peaches
This tea is very concentrated and full of flavor so make sure to serve it on plenty of ice.
