Pad Thai

Pad Thai or Phat Thai is considered Thailands National dish and therefore offered in every Thai Restaurant I have ever been to.  It is also super easy to make at home with ingredients found in your pantry.  Provided that you cook enough Oriental Food to house such staples like Noodles, Fish Sauce and Chilli Paste.  If you have all those already you most likely have the rest and can make yourself your own Pad Thai with whatever vegies you have at home in about 5 minutes.

You will need: 1 package of noodles (about 1/2 pound) I used Udon but if you are strapped for noodles I guess spaghetti will also work, 1/2 cup of vegetable of canola oil, 3 cloves of garlic, 2 tsp sweet chilli sauce (we use this one on chicken tenders), 1 tsp brown sugar, 2 tbs thai fish sauce, 1/2 cup water, 2 large eggs, 1/4 cup sliced scallions (green onions, about 4), 1/2 cup snow peas, 1 1/2 cups bean sprouts (I found these close to the herbs in my grocery store but you can also buy canned ones in the oriental section), 1 tbs lime juice.  Cilantro and Peanuts (I used Hazelnuts) for Garnish.

Chop up the garlic or press it through the press.  Cook the noodles according to the directions on the package.

Heat the oil in the wok or large saute pan.  Add the garlic, chili sauce, fish sauce and brown sugar.

Add water and mix.  Cook on medium heat for about 2 minutes or until the sauce thickens slightly.

In the meantime beat the eggs

Chop up the snow peas, make sure to remove the strings.  You can make these very thin and therefore more presentable but I do not have that sort of time.

Chop the scallions.

To the pan add the beaten eggs, stirring constantly until they are soft set, meaning they are starting to resemble scrambled eggs.

Add the noodles, toss and cook for 4 minutes on medium heat.

Add the vegetables and sprouts cook for about 2 minutes.  If you like your food spicy add 1/2 tsp crushed red chilli flakes at this time.

Add lime  juice toss.

Array

Place on a serving plate and sprinkle with cilantro and nuts.  Serve with 2 sliced limes for garnish.

    what a coincidence! I just finished eating a Thai-inspired chicken with a peanut curry sauce, over some sticky rice. I love the flavors of Thai food– especially coconut, lime and peanuts. I have, yet, to make my own Pad Thai, and this looks like a great variation. You know what would be really cool? I’d love it if you had the recipe written out so that it could be easily cut and pasted– or even a printable version!
