Oatmeal Plus Cookies

I do become kinda lazy at times, which in my case it really means that on certain days I do not feel like making breakfast and/or dinner, washing the floor, doing laundry all in between taking care of the two stinkers, a dog, a cat and occasional tween.  So I come up with some semi creative ways to be off the hook.  This is one of them Oatmeal Plus Cookies.  I have taken a regular oatmeal cookie and added whatever else I had in the kitchen.  This recipe varies of course and you can omit the chocolate or dried fruits add any seeds or nuts if you wish.  The possibilities are endless.  But the kicker is that it does make a nutritous breakfast for the kiddos, well maybe not with all this chocolate.  This way they think they are eating a cookie while they are getting so much more.  Make it and you will know what I mean.

1+ cup of dried fruit in this case I took 1/2 cup raisins, 1/2 cup cranberries and a handful of apricots.  1 cup of quick oats, 1 egg, 1/4 cup white chocolate chips, 1/4 cup dark chocolate chips.

1tsp vanilla, 1/2 cup granulated sugar, 1/2 cup light brown sugar, 1/2 cup unsalted butter, 1/4 tsp each: cinnamon, ground cloves, ground nutmeg, allspice, 1/2 tsp baking powder, 1/4 tsp baking soda.  That’s about it unless you are feeling nutty.

Preheat oven to 375 deg. Cream together butter and sugars.

add egg and vanilla.

while the machine is cranking sift together flour, spices, baking soda and baking powder and 1/4 tsp salt.  I always forget to put it in pictures but I figure you have it at home.

At to the butter mixture and beat until combined.

Chop the apricots or whatever bigger dried fruit you are using.

Yummy, oats, chewy fruit an chocolate.

Mix it all together.

Time to get dirty.  Using your hands roll the dough into balls.  I always bake big cookies thinking that if you are going to have a cookie have a COOKIE.  Maybe if I made them smaller I would eat less, nah I would most likely just have more of them.  This way I can say I had only one.

Put the cookies unto lightly greesed baking sheet and into 375 deg oven.  Bake for 12-15 min or until lightly golden all over.

Enjoy for breakfast, lunch and dinner while lazy.
