Mediterranean Tuna Salad

There are so many Tuna Salad recipes that I could probably write about a different one each day of the month.  On this page have already featured my 2 year old son’s favorite Tuna Pasta Salad.  This is Mamma’s Favorite, That’s Right.  Don’t Touch.  Go make your own.  Thank Goodness my husband does not like it because for me it is divine and I am not certain if I would even share it with him.  As you may already see on this blog my husband and I like totally different things he is the meat and potato, fried fish, manly food person and I could live on salads and Cole Slaw.  I think that is a common male/female problem but there are plenty of metrosexuals that will love a salad or two.  That is not my husband.   So this salad is a Girlie Food to the extreme, health in a cup, lettuce cup if you choose, or on a salad,  or in a bun.

You will need: 4 (6oz) cans of albacore tuna in water (drained), 1 (14oz) can quartered artichoke hearts (drained), 1 (4oz) jar of diced pimentos (or 1 roasted red pepper chopped), 1 cup Greek Calamata Olives, 1/2 small red onion, handful of cilantro (about 1/4 cup minced), handful of basil (1/4 cup minced), 2 cloves of garlic minced (1tsp), 1 tsp italian herbs spice/mix, 1 cup mayonnaise, 3tbs lemon juice.

Mince the onion, chop the artichokes in quarter if you did not read the directions and bought whole ones, slice or chop up calamata olives.

Mince Cilantro and Basil.  You can always use Parsley which in fact is more Mediterranean, but I do not like Parsley (don’t ask why) and substitue it with Cilantro whenever I can.  I don’t know why?

Mix one cup of Mayonnaise and 3tbs of lemon juice.

add minced garlic (it could be pressed if you have a garlic press), basil/cilantro and dried italian spices.

Mix in the tuna.  I like to mix it up well so it is not too tuna chunky, unless you like it that way.

Add the Artichokes, Olives, Pimentos and Onions incorporate.

The salad becomes better and better with time so try to give  it at least and hour to marry.  I know I am really bad at waiting also.  Especially for food.  Especially with Toddlers.

You can serve it on a nice loaf of bread and let the juices seep into the bun, or make it a pita or a panini with extra cheese.  The possibilies are endless and it should keep in your fridge long after you have finished it all.
