Grilled Pizza with Peaches, Prosciutto and Goat Cheese

I have attempted for the first time in my life to make a pizza on the grill.  I have been thinking of it all summer but it was not till I went peach picking and ended up with 50lb of peaches that I figured I needed to use them somehow.  So just like Bubba in Forest Gump I made Peach Ice Tea, Peach Galettes and now Peach Pizza.  Even though I am slightly peached out I love making pizza on the grill and I will never ever make one in the oven again, gas help me.  Just see how easy and fast it is.

I was about to find ready pizza dough at my local grocery store (next to the mozzarella cheeses) for a whooping price of 58 cents.  I also purchased 5 slices of prosciutto ham (thinly sliced), 1 peach, few slices of red onion and few drops of goat cheese.

I am not really good at squeezing every dime out of food, since food is the last thing I will cut back on, but this is so thrifty that it may even beat some overpriced Ramen Noodles.

Array

Preheat your grill to super high

Array

As well as you can make it stretch the dough into desired size.  I would spit it into small pizzas since they are much easier to manage.  You will see why.  All I have to say is that I have new found respect for pizza tossers, it is not an easy job.

Array

brush the dough with olive oil and throw it on the grill

Array

after about 10 sec flip.   You noticed that I didn’t do too good of a job.  Oh well I used the nice half and the other half became bread sticks that we dipped in pizza sauce.

Array

Remove the crust from the grill pile on sliced peaches and prosciutto

Array

add few red onions

Array

and goat cheese

Array

place on aluminim foil and back on the grill, make sure the grill is on low or alternatively place in the oven to melt the toppings

Array

Cover and cook for about 3 min longer or until the ham is crispy and the peaches soften

You can follow these instructions with any topping.  Yesterday I also made Pizza Margarita by adding slice tomatoes and fresh mozzarella and of course Pepperoni with sauce and cheese.  This is so quick and so fun for kids since they can choose their own toppings and for dessert I guess Peaches and M&M pizza sounds good to me.
