Freckled Brownie Pancakes

I found these incredible cookies in the Polish store called Pieguski (Freckles) and ate the entire box almost by myself.  I did have to fight my husband for them but since he is on low carb diet it was not hard.  These were chocolate cookies with chocolate pieces, nuts and coconut.  I had to have more so today I decided to “tweak” and make them into pancakes.  They turned out wonderful more like a brownie then a real pancake.  So go ahead fool your children and have dessert for breakfast.

You will need: 3/4 cups flour, 1/2 tsp baking soda, 1 egg, 1/2 cup milk, 2tbs coco powder (I used unsweetened), 2tb sugar, 1 tbs hazelnuts, 1 tbs mini chocolate chips, 2 tbs coconut and 1/4 tsp vanilla (not photographed)

To a medium bowl add milk and egg

mix well

place a swifter (or whatever you are using) over the bowl and swift together flour, baking powder and coco

Mix well add vanilla, chocolate chips, sugar, hazelnuts, coconut

mix until well incorporated

cook on medium high heat with a little butter for about 2-3 min a side

or if you have these super duper molds realize that they will be thicker and will cook for longer

they will also stick like crazy to the mold, since of course you forgot to spray it, grease it or do whatever needs to be done for them to work properly.  Remember you are not American so you can’t do pancakes well no matter what, unless they are made with potatoes.  Crepes (Nalesniki), yes.  Oatmeal, yes.  Pancakes not so much unless you make them more Polish which I have done here before.

They turned out really good.  Almost like Pieguski.  Rich, decadent, not too sweet so you can taste the sweeter morsels when you bite into them.  Yummy.

    These pancakes look soooo good. My kids would beg me to make them every day LOL Love the pancake mold too, it’s adorable! I will most definitely have to give these a try, they are making my mouth water :o )
