Curried Cauliflower with Chickpeas and Tomatoes

I am not sure about you but I can eat chickpeas like crazy lately.  I just love them.  This recipe has been my favorite for a long time.  It has been adapted from Tyler Florence and it is the best way to make cauliflower, ever.  If you like spicy food this one is for you.  Healthy, spicy and vegetarian, what else can you ask from a meal that will be my breakfast lunch and dinner.

You will need: Large (1lb and 13 oz) can of Garbanzo Beans (chickpeas, drained), 1 small cauliflower (about 1 lb), 2 vine ripe tomatoes, 2 tbs curry powder, 1 medium yellow onion, 2 tbs of butter, 1 inch of ginger (grated), 2 tbs tomato paste and 1 cup water (not pictured)

Finely chop the yellow onion

Seed and dice the tomatoes

In a pan melt the 2 tbs butter

until bubbly

add onion, tomatoes, graded ginger and curry

Cook until soft , about 6 minutes

In the mean time cut the cauliflowers into florets, what does that mean?  Cut out the hard (YUMMY) core inside, eat it why you leave the “flowers” with slight stems for the dish

add it to the dish along with 1 drained can of chickpeas and 2 tbs tomato paste

top of with 1 cup of water

Array

Stir together, cover and cook on medium/low heat for 20 minutes or until tender.   When soft uncover and cook until the mixture evaporates slightly and resembles gravy.

Dig in and enjoy.  You can eat it as spicy side dish, main dish with piece of crunchy french bread.  It is amazing.  But you must like it HOT.  Do you like it HOT?  Can you handle the heat?

    LOL, too funny I had cauliflower featured on Monday as well but the two dishes could not be any more different.
    I love Tyler Florence and this dish looks incredible. I would have never thought to mix cauliflower and chickpeas! Wonderful, will definitely add this to my bookmarks.

    Made this dish, and was surprised how good it was. I thought looking at the ingredients that it would turn out bland, but boy was I wrong about that! The flavour was delicious, and I’m just thinking of all the possibilities you could do with this recipe with other veggies.
