Coconut Chicken

Another day another Chicken dish.  It is all those darn toddler twins.  It is because of them that I am trying to replicate, duplicate, not quite copy “chicken nuggets and french fries”.  I mean it is getting bad.  My son now has pretend conversations with Spongebob Squarepants ordering food.

“Hello Spongebob, Can I have 4 piece of chicken nuggets, 4 piece of fries and 4 piece of diet coke”.

Seriously where does he get it?  He is only 2.5 and I swear we stop at MDs at most once every few weeks and that is on super duper busy days.

I have made numerous attempts to replace my kids urge for MD with buttermilk marinated nuggets, chip nuggets and now coconut ones.  What do they put in that stuff anyway?  Don’t get me wrong my kids love my cooking but still ask for chicken nuggets.  Is it too much for a 2.5 year old to ask for coconut chicken instead.  I mean the dude already knows how to order a 3 course meal from Spongebob.

You will need about 1 lb of chicken tenders, 1/4 cup of breadcrumbs, 1/4 cup of unsweetened coconut flakes, 1/4 tsp soy sauce, 1 egg, 1 tbs flour.  Optional for dipping Chili Sauce (not needed according to my husband)

Note: Depending on the size of the package you may need to use more egg, flour or coconut mixture.

Mix the egg and 1/4 tsp of soy sauce together in one plate

into another pour coconut and bread crumbs and mix together

take out another plate and use it for flour.  I understand that you do not like to do dishes and this requires way too many.  Alternatively you can use ziplock bags (its shake and bake) or plastic plates.

now this is your cooking station.  You could allow your kids to help out at this moment making themselves and the kitchen incredibly dirty while you pour yourself a glass of wine.  Or you can just take another swig of your cold coffee and continue on your own.

Breading… that’s it now it is time for the bake part

Place on a oiled skillet and saute until golden, flip to the other side.

Serve with chili sauce or nothing.  Sit back let the kids enjoy.  My daughter asked for thirds or maybe even fourths (lost track) but now I need to start a language class “Could I have some Coconut Chicken, Pleeezzzeee”

  2. I dig this. I love coconut and restaurants are always crusting their shrimp (yech!) with coconut, but never their chicken. I should follow your lead and do that myself.

    Well, these look so very good and I am not a toddler. What a delightful place you have here. Just stopping by for the first time and excited that there is so much to see. I saw a mention of twins. I looked for an “about” but didn’t see one to try and get to know you a bit before perusing your blog. Our middle children are (all grown-up) twins with children of their own.
