Chicken Pasta Salad with Dill

Thanks to toddlers I have been experimenting with different pasta salads.  It is an easy pick me up food for little bellies that need to eat right now and not a second later.  It is also a great  full meal option that includes carbs, protein and vegetables in one shot, well more like a mouth full.  Plus they can be stored in the fridge at all times, waiting patiently until you eat them.  No need to heat up just grab and go, Perfect.

You will need: 1/2 lb of noodles (farfale,macaroni etc), 1/2 cup Greek yogurt (small container pictured), 1/2 cup mayonnaise, 2 cooked chicken breasts, 1 cup grape tomatoes, 1/2 lemon, 3 green onions, 1 can of sweet corn, 1/4 cup chopped dill, 1/4 tsp cumin (not pictured).

Cook the noodles according to directions on the box.  In a bowl mix together yogurt and mayo.

Squeeze in the juice of 1/2 lemon and cumin mix well

Add chopped dill

Array

Drained corn and halved cherry tomatoes

Add cut up chicken and sliced green onions

Array

Finally add the pasta and toss together

Serve right away or wait till you are ready

The pasta will keep in the fridge for about 3 days.
