Chicken Marsala

This is the recipe for the garden variety Chicken Marsala, you know the one you can get at any Italian Restaurant.  The one filled with mushrooms and sweet Marsala Wine.  The great thing about this recipe is that it is super easy to make and it makes you look like you really really know how to cook.  It also calls for four ingredients and describes Italian chicken cooking technique making dishes like Chicken Saltimbocca or Lemon Chicken a breeze.

You will need 3 chicken breast, 8oz of button mushrooms, 1/2 cup Marsala wine, 1/2 cup of chicken stock, flour for drenching, oil, 2 tbs butter (not pictured)

I slice my chicken in 1 inch slices and pound them into 1/2 inch thin, toss in flour

place on oiled pan ( I used olive oil) and brown, flipping over once

remove  the chicken from the pan and set aside

to the pan add more mushrooms and more oil if needed and saute till brown.  At this time some people (non purist) decide to add some extra meat like ham, bacon or Italian ham like prosciutto.

I didn’t I like this dish simple.  I know… I must be sick… nothing is ever simple in this blog… well for once I pass the baton and want you to get creative

Wait till the mushrooms are soften or brown

Add 1/2 cup of Marsala Wine,

Made in Marsala, Sicily it is a sweeter wine more similar to Port or Sherry.  Depending on the brand of Marsala Wine you choose the dish can be more or less sweeter.

Cook the wine until mostly evaporated, or until the alcohol has evaporated to be more exact

add 1/2 cup of Chicken Stock

Cook for about 30 seconds or enough to bring it back to boil and gather the rest of the ingredients

meaning the cooked chicken and 2 tbs of butter which you put back in the pan

Cook for about 2 minutes or until the butter melts and the sauce thickens.

toss the chicken to coat and serve.  Personally I love it on garlic mashed potatoes but you can also serve it on rice or by itself.  The dish does not take longer then 15 minutes to make and can be embellished with bacon, ham or prosciutto and garnished with parsley or chives.  You can use more exotic mushrooms, more exotic herbs.  Any way you serve it, It will be marvelous.
