Chicken and Chips

You have heard of Fish and Chips I am sure.  This is totally different.  This is Chicken and Chips and not how you imagine it.  This is Chicken and Chips in one portable, finger food friendly way.  This is easy to cook and portable, plus it is baked not fried (well the chicken portion at least, the chips depend on the package).  Plus it is a great alternative to regular chicken nuggets at the drive through.

You will need 1 lb of chicken (tenders or scallopini which is what I am using), 2 eggs, flour, and a favorite bag of chips.  I am using Cheddar Chips but choose your own.  If you can’t live without Doritos, Fritos or Funyons then use those.  If you just love those italian herbed vegie chips then try it with them, or if you just do not like chips (who are you and what is wrong with you?) you can use pretzels or nuts.   Just pick your poison, I mean chip.

Preheat the oven to 350 deg.

If you choose to make your chicken more tender you can marinate it in butter milk mixture we used in our Chicken Tenders Recipe.  I did not marinate them.  Take your bag of chips and crush it into pieces.  This is a great excercise when you are angry.  Almost like punching a bag.  Squeeze it, squeeze it.  You can do it, just imagine the face of whoever or whatever is aggrivating you on the cover.  Don’t get too used to this therapy or you will be eating Chicken and Chips everyday.

Prepare 3 plates.  One on the left is flour, center is eggwash (egg mixed with a bit of water), right is your crunched chip.

I cut my scallopini into smaller pieces but if you are using tenders then you don’t have to worry about this portion.  Place the chicken in the flour first cover it fully.

next roll it in egg wash.  This is a prefect thing to have kids help with since they love to get dirty.  Each child can take one station.  Make sure that you wash your hands a lot.

next stop the chips.

Place the chicken on a baking sheet and bake for about 25 min or until golden brown.

Serve it with ketchup or sweet chilli sauce (adult favorite in our house), or I guess if you are using pretzels, mustard.

    I love that you can switch up the chip flavors to change the flavor of the dish. I’m thinking oil and vinegar would be delicious…
