Chicken ala Mediterranean

I love the Mediterranean bar in the grocery story.  It is rare that I can pass by it without coming home with olives, artichoke hearts or roasted red pepper.  I throw all these ingredients into a Tuna Salad but I wanted to make something more summery with it.  Something that my husband can make on the grill.  It worked and it turned out amazing well at least me and the tween love it, as for the hubby he is still dreaming of his Adobo Mango Chicken.

You will need: 6 chicken breasts, 6 pieces of provolone cheese, 1/2 medium red onion,1 serrano or jalapeno pepper, 1 1/2 cups Mediterranean bar  mixture with juices (for me it was 1/4 cup artichoke hearts, 1/2 cup mixed roasted peppers, 1/2 cup mixed olives (green and kalamata), 1/4 cup marinated mushrooms).  Not pictured: 1 handful cilantro and 1 handful oregano (about 1/4 cup each chopped).  Salt, Pepper to taste.  Olive oil for grilling

Heat the grill to high.  Season the chicken with salt and pepper, drizzle with olive oil

throw the chicken on the grill

While the chicken is cooking finely chop the onion

Take out the olives, mushrooms, peppers and artichokes reserving the liquid

and roughly chop

Clean the hot pepper by removing the center and seeds

mince or slice into very small pieces don’t worry the mixture is not too spicy.

Clean and slice the celery

Take a handful of cilantro (or parsley) and oregano

and slice into smaller pieces

Mix all the ingredients together in the bowl

Add salt and pepper to taste and some of the juices, about 1 1/2 – 2 tbs.  I like those a lot better then adding traditional oil and vinegar.  It makes this dish fresher other then being served with greasy tapenade.

return to the chicken, flip it flop it until it is cooked

top with provolone cheese and wait till it melts

You can throw the topping on the grill or wait to top it during serving time.  Either way you will be adding more and if you like it as much as me and my daughter you will be making it a lot.  Unless daddy gets his way and we will be eating Mango Chicken every day for months.

    Well – as much as my sweetie loves your mango chicken – and he loves it a LOT – I think he is going to go crazy for this dish as well. All his favorite savories – olives, artichokes, roasted peppers, shrooms and onions. Just need to get my hands on a Mediterranean bar and we are set!
