Cherry Peach Crumble

Crumbles or crisps are really one of the easiest way to use fresh fruit in the summer.  Mine usually included some oatmeal and nut for a topping because I want the fruit to speak for itself.  Sweet cherries are one of those fruits that are not easy to bake or cook with.  They are amazing eaten fresh but once cooked or baked they loose  lot of their natural flavor, which is unfortunately what I found out after I brought home 5,000 pounds of sweet cherries from our cherry picking excursion.  Tart cherries are different they are full of flavor, sweet ones need to be coerced.

You will need: 2lbs of cherries, 3 peaches, 1/3 cup of light brown sugar, 1/4 cup flour

For the crumble: 1 cup of flour, 1/3 cup sugar, 1/3 cup oats, 3/4 cup sugar, 6tbs butter, 1/2 cup chopped almonds, 1/2 tsp cinnamon,  pinch of salt

Preheat the oven to 350 deg.  To make the crumble mix 1/3 cup of oats into 1 cup of flour

melt the butter in a microwave (or stove top) and pour over the mixture

add almonds or your nut of choice.

mix with your fingers until the mixture resembles course meal, put in a freezer until ready to use

Pit the cherries or if you are not bothered by the pints leave them the way they are.  As for me I have toddlers so I got myself this cute cherry pitter.  It is so cute that I can actually get the twins to help me pit.  Plus it is not sharp so I am not worried that they would get injured.

Slice and peel the peaches throw into a 9×13 inch pan.

Add 1/3 cup brown sugar and 1/4 cup flour.  Toss together.

Take the crumble topping from the fridge and scatter all over the fruit

until evenly covered.

Array

Bake for 40 minutes or until golden brown and bubbly

Cool and serve by itself or accompanied by ice cream or whipped cream.

    I had no idea that cherries were so difficult to bake.I thought perhaps the most difficult part would be pitting them, but you figured that one out and even got helpers. :) This peach/cherry crumble looks wonderful. PS Love the plate!
