I have been told by my husband yesterday that this is the best meal that I make and that I never make enough of it. Who would have thought that this would be his favorite? It is not fried but baked, it has avocado and mango and most importantly it is healthy. Healthy eating and my husband’s favorite meals are never ever on the same menu. But I am proved wrong, very wrong. It just goes to show that you truly don’t know the person you live with and will find yourself pleasantly surprised on more then one occasion. First time I made it was just for me but since then even the toddlers ask for more. To be honest they do not care much for the mango avocado salsa that accompanies the dish but could eat the chicken by hand fulls.
You will need: 4 boneless chicken breast or 1 lb of tenders, 1/4 cup Worchestershire sauce 1tbs soy sauce, 2 tsp adobo sauce (from chillies), 1 large mango,1 large avocado, 1tbs minced cilantro, 1 tbs minced onion, 2 limes (one for garnish), salt.
I decided to use chicken tenders since they are a lot easier to share. Into a bowl pour 1/4 cup worchestershire, 1tbs soy and adobo, fresh juice from 1 lime. Try not to get too many of the chillies but some will add a little kicker to the chicken.
Mix and marinate for 30 min. Preheat oven to 350 deg.
In the meantime, cut the avocado into cubes
Skin, seed and cube the mango
Mince the cilantro and
onion
Mix all the ingredients with a dash of salt in a bowl. This will be your “salsa” to serve over the chicken.
Oh yeah, Chicken. What about the chicken? Place it with the juice in a baking dish and throw into the oven until done, about 20 minutes. The chicken will be really moist and will fall apart easily.
Place the chicken on a serving plate and top with the avocado/mango mixture. The moist spicy chicken (not too spicy, remember toddler friendly) mixed with sweet mango, creamy avocado and crunchy onion can make a healthy food lover out of everyone, really.

I just had to pop back to tell you that we just finished a most enjoyable dinner which included this dish. This recipe is absolutely delicious. One of those dishes that inspires you to say yummmmmmm after every single bite. We both enjoyed it so much and it will be on the menu frequently around this house!
I used defrosted frozen boneless chicken thighs and they worked perfectly. I wouldn’t hesitate to serve this to company – it is delicious and quick and easy!
